Introduction

This is a very quick, one-pan dinner! I started with a box of the Reggano Fettuccine Alfredo and used turkey cutlet strips in place of the tuna and added mushrooms and petite peas. This is a very quick, one-pan dinner! I started with a box of the Reggano Fettuccine Alfredo and used turkey cutlet strips in place of the tuna and added mushrooms and petite peas.

Ingredients

    1 Box Reggano Fettuccine Alfredo
    4 oz. crimini mushrooms, sliced
    1-1/2 c frozen petite peas
    3 tbsp. coconut oil
    2 c 2% milk
    1-1/4 c hot water (approximately)
    14 oz. turkey cutlets, sliced into thin strips
    Seasoning for turkey strips, about 2 tsp.

Tips

Use whatever seasoning you like for the turkey cutlet strips. The instructions on the box called for 1-1/2 cups hot water, but there was a good 1/2 cup of liquid in the pan from the mushrooms and strips.


Directions

Heat coconut oil in large frying pan, add seasoned turkey strips and brown, add mushrooms and saute for a few minutes. Add seasoning from packet included with mix, noodles, hot water and milk. Bring to boil, reduce heat and cover; cook for 2 minutes. Add frozen peas, cover pan again and cook on very low heat for 10 minutes. Remove from heat, uncover to allow sauce to thicken. Refrigerate leftovers.
