Ingredients

    3 C brown/white mushrooms
    1 C onion
    4 C chicken broth
    1/4 C quinoa
    1 T miso paste
    3/4 jar roasted red peppers
    3 C kale
    1/2 C Simply Balanced (cooked) Lentils
    20 oz cooked chicken breast

Directions

saute mushrooms until brown, set aside. Saute onion in dutch oven, once wilted add broth and quinoa. Bring to a boil and reduce slightly. Add mushrooms, miso red peppers, kale, and lentils; simmer until heated through.
