Ingredients

    1.5 lb boneless skinless chicken breast, cut into bite size pieces
    1/2 onion, finely minced
    3 cloves garlic, minced or grated
    1 tbs freshly grated ginger
    1-2 tsp curry paste (red curry paste)
    2 tbs garam masala
    1/2-1 tsp cayenne pepper adjust to taste
    1/4 teaspoon salt
    1 (6ounce) can tomato paste
    1 (19 ounce) can coconut milk, light works
    1/2 cup greek yogurt
    1/4 cup almond milk

Directions

In a large glass measuring cup or bowl mix together the coconut milk, greek yogurt and almond milk. Stir in the tomato paste, garlic, ginger and all the spices. A whisk works well.

Spray the inside of crockpot with cooking spray. To the crockpot sprinkle the onion over the bottom. Add the chicken and then pour the coconut milk mixtur over the chicken to cover completely. Place lid on crockpot. cook on high for 4 hours or on low for 6-8 hours. Season with salt and pepper when served. Serve over rice with Naan bread.
