Introduction

These simple Butter Cookies are both Gluten-free and Sugar Free. These simple Butter Cookies are both Gluten-free and Sugar Free.

Ingredients

    1 Cup Butter (Soft)
    1/2 Teaspoon Pure Vanilla
    1 Large Egg
    1 Teaspoon Xanthan Gum
    1/4 Cup Zero Calorie Sweetener (Stevia)
    2 Cups All Purpose Gluten-free Flour (Cuisine Soleil)

Tips

A Stand mixer makes this project easier.
I use a commercial scoop for spooning out the dough keeping size/shape uniform... well worth the investment.


Directions

Preheat Oven to 375°F (190°C)
1.Cream butter and sweetener together.
2. Beat in egg.
3. Blend in Vanilla Extract.
4. Add Flour and mix well.
5. Drop on cookie sheet and press with fork.
6. Bake at 375°F for 10 to 15 minutes.

Serving Size: Makes 16 - 18 Cookies
