Ingredients



    *Chicken breast, skinless, boneless, steamed, 100 gram(s)
    Shrimp, cooked, 100 grams
    *Extra Virgin Olive Oil, 1 tbsp
    Indian, Aromatic Basmati Rice, aprox 3/4 cup, 1 serving
    Peas, frozen, 0.5 cup
    *1 med yellow onion, 1 serving
    Garlic, 2 cloves
    1 Med. Green Bell Pepper, 0.5 serving
    *1 - Chicken Stock Cube, 1 serving

Tips

I cook one breast and use half. The other half goes in the fridge for tomorrow's lunch.


Directions

Steam or microwave the chicken breast - make sure it's cooked right through.
Boil the rice
In a frying pan sweat the onions followed by the garlic then add the chicken and any juices left from the microwave. If none add a little water.
Add the peppers, frozen peas, and crumbled stock cube.
When the rice is cooked, strain and combine with the contents of the frying pan.
If desired, add a little curry powder or other spice to zing it upp a bit.
