Introduction

a vegetarian 'meat' ball or neat ball that is dense and filled with vitamins but that can fool many meat eaters. just add to your favorite sauce. :)

i put this under entree, though it is perfect as an appetizer when made with your favorite bbq or sweet n sour sauce :)

Ingredients

    4 eggs, beaten
    1 pkg Onion Soup Mix
    3/4 c. colby cheese, shredded
    3/4 c. montery jack cheese, shredded
    1/4 c. cashew nuts
    1/4 c. almonds
    1/4 c. sunflower seeds
    2 Tbsp. Nutritional yeast
    1 c. bread crumbs, seasoned

    optional seasonings:
    garlic powder
    herb blends of choice such as italian seasonings
    {note: do not add salt]

Directions

preheat oven: 400
prepare cookie sheet by spraying non-stick coating or brushing with small amount of olive oil

first:
ground cashew, almonds, and sunflower seeds in a coffee grinder to a fine powder.

in mixing bowl, add and blend each ingredient, one at a time to ensure a good blend.

let mixture sit in fridge for at least 30 minutes.

spoon mixture out with a teaspoon and then form into balls, approx. 1 inch sizes.

bake on cookie sheet for 10 minutes and then turn to bake on the other side for an additional 10 minutes.

at this point, neatballs are ready to freeze or to be added to your favorite sauce while cooking.
