Ingredients

    14 Chicken thighs with skin and bone
    4 oz margarita mix (from a bottle or frozen)
    4 oz soy sauce
    1 tsp cajun spice
    1 tsp garlic powder
    juice of 3 limes

Tips

I served this with mexican rice, refried beans, and the special mexican vegetable salad. Definite hit with everyone.


Directions

Rinse chicken and dry it off. Place in plastic bag.
Mix tequila, margarita mix, soy sauce, cajun spice, garlic powder and the lime juice and pour over chicken. Refrigerate at least a couple of hours, overnight also works well.
Drain marinade and cook on stove top in sauce pan for at least an hour to reduce down to thicker sauce.
Bake chicken on parchment paper lined pan for 1 hour at 350 degrees. Baste with reduced sauce last 10 minutes.

Serving Size: Serves 7 (2 thighs each)
