Ingredients

    8 oz cream cheese (room temp)
    1 small box sugar free jello (any flavor)
    3 large eggs (room temp)
    1 packet stevia
    1/4 C hot water

Tips

Make sure to put bowl and beaters in the frig for about 15-20 mins before beating the egg whites. Can chill cookie mix for 30 mins, but not necessary.


Directions

Preheat oven to 350. Beat egg whites until stiff peaks. Dissolve jello in water and set aside. Cream the egg yolks, stevia and cream cheese and then add the jello. Blend until smooth. Fold in egg whites. Scoop by tablespoons or small cookie scoop onto parchment paper sprayed with nonstick spray and bake for about 12 minutes or until golden brown. Cool on paper for 2-3 mins and remove to rack or parchment paper to cool. Store in air tight container in the frig.

Serving Size: 5 1.5" cookies at 2 carbs (makes about 40 in a batch)
