Introduction

Homemade coleslaw, refreshing, low calorie side dish! Homemade coleslaw, refreshing, low calorie side dish!
Number of Servings: 12

Ingredients

    5 cups Fresh Express Cole Slaw Mix (w/ red cabbage, green cabage, and carrots)
    1/2 cup red onion, finely chopped (optional)
    2 Red Delicious apples, finely diced
    1/2 cup fat-free mayonnaise
    1/3 cup white vinegar
    1/4 cup sugar
    2 TBS + 2 tsp Dijon mustard
    1/4 tsp salt
    pinch white pepper

Directions

Combine coleslaw mix and apples in a large bowl, mix well.

Combine remaining ingredients in a small bowl and mix well to make dressing.

Pour the dressing over the slaw mix and toss until evenly coated. Cover tightly and chill before serving.

Makes appx. 12 1/2 cup servings.

    I made it with apple cider vinegar and added some shredded carrots. Also used 1/2 head of cabbage. - 5/19/08

    I used 1/2 head of large cabbage instead of pre-cut and pre-mixed. More cost effective. - 5/17/08
