Ingredients



    INGREDIENTS:
    1 1/2 pounds yucca, peeled, halved and cut into chunks (Frozen yucca may be available in Latin markets in your area)
    1 lime (juice from)
    6 cloves garlic mashed into 1 teaspoon salt
    1/3 cup lemon juice
    1/2 cup olive oil
    1 onion, chopped fine

Tips

It's best to buy fresh Yucca(Cassava) root in the grocery store as it has much more flavor, but peeling the skin is a hard. So, frozen Yucca is usually available and is a good substitute.


Directions

Place yucca in a large pot; add water until yucca is just covered. Add salt and lime juice, and bring to a boil. Reduce heat, cover, and simmer until tender about 30 minutes, Yucca should be firm, but soft enough to cut with a fork. Drain.
In the center there may be rope type strings, and they should be removed core from the yucca.
Mash garlic cloves. Add garlic, lemon juice, and onions to olive oil in a separate saucepan, heat until bubbling, then turn off heat.

Sauté Yucca with about a 1/2 cup of Mojo Sauce over medium heat until barely browned, but not crisp! Serve immediately.
