Ingredients

1 egg
2/3 - 3/4 cup olive or avocado oil (make sure olive oil is light tasting, otherwise the flavor will be too strong)
2 teaspoons lemon juice
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Tips
Stir in other spices to make flavored mayo. Chipotle chili powder and garlic powder make it a delicious chipotle mayo.
Directions
Combine egg, lemon juice, and mustard in a food processor. With the food processor running, drizzle olive oil in a slow and steady stream. The mayo will thicken and lighten in color as you combine everything.
Stop every so often to scrap the side of the food processor.
Once the mayo thickens transfer to sealed container and refrigerate. Lasts up to one week.
