Introduction

37 grams Avocados, Florida
1 medium Egg, fresh, whole, raw
1 cup dry Oatmeal (plain)
1 cup, strips or slices Carrots, raw
0.5 cup, shredded Coconut, raw
0.5 tbsp Honey
Tips
You can replace the honey with brown sugar, but I think honey is healthier. Cinnamon is optional, but let me tell you it gives the muffins a great flavour. Before baking, spray the muffin pan with some olive-oil or any kind of oil you usually use (I used pumpkin oil).
Directions
Mix the wet ingredients: the egg, with the mashed banana, mashed avocado, the carrot stripes and honey and than add the mix of dry ingredients (oatmeal, coconut, baking powder and cinnamon*).
Mix all the ingredients together and put them in the muffin pan. Bake for about 15-20 minutes.
You should get 6 to 8 muffins. I eat them for breakfast and they are so good for your health and full of nutrients. You have carbs, proteins and healthy fats, all in one super delicious muffin. Enjoy!
