Ingredients

    1.5 cups Organic All-Purpose White Flour
    1.5 cups Organic Whole Wheat Pastry Flour
    3 tsp Baking Powder - non-aluminum
    2 tsp Baking Soda
    .5 tsp Salt
    2 tbsp Organic Golden Flax - milled
    2 tsp Organic Cinnamon
    .5 tsp Organic Nutmeg
    .5 tsp Organic Cloves
    4 Large Pasture-Raised Eggs
    2 cups Organic Granulated Sugar
    1 cup Organic Canola Oil - or any light oil
    1.5 cup Organic Applesauce - unsweetened
    2 tsp Organic Vanilla Extract

Great with yoghurt or milk over it!


Directions

Pre-heat oven to 350F degrees.

Spray with cooking spray or butter a 9"X13" glass pan or equivalent oven-safe dish. Line with parchment paper.

Sift flours, baking powder, baking soda, salt, flax, and spices into a bowl. Using a stand mixer, hand mixer, or a nice big flat whisk, combine the sugar and oil, then add eggs one at a time. Beat until light. Stir in applesauce and vanilla. Add flour mixture in 3 parts, stirring until just combined.

Pour into prepared pan.

Bake for 30 minutes, then check with toothpick or touch. If not ready, bake for 5 minutes more, then check again as needed.

Cool until you can lift it out of the pan without burning your fingers, and eat! Or, if you can wait, until cool enough to frost or sprinkle with powdered sugar.
