Introduction

I added this mostly for myself for nutrition calculation, this isn't for everyone, the sauce is a little bitter/sour tasting. The original recipe called for cucumbers and the sauce only but I wanted a little more. Ingredients

    1 small (6-3/8" long) Cucumber (peeled) - thinly sliced the long way
    2 very thinly sliced RED Onions,
    1/2 small whole (2-2/5" dia) Tomatoes,
    1 oz Feta Cheese
    2 sprigs Dill weed, fresh

    Sauce
    1 tbsp Peanut Butter, chunk style
    1 TBS Lime Juice
    1.2 tbsp Sesame Oil
    1/2 tbsp Peanut Oil
    2 tbsp Cilantro, raw

Tips

Adjust the taste of the vinaigrette to suit your taste. I ate the whole salad as a main course dish.


Directions

Thinly slice cucumber the long way, I used a mandolin and place in a plate or dish
Thinly slice onions and add to cucumbers
Quarter the tomato 1/2 into wedges and add to cucumbers
Add Feta chunks to dish
Sprinkle dill weed over mixture.

Whisk lime juice, peanut butter, peanut oil, sesame seed in separate small dish. Drizzle over salad mixture.
top with Cilantro leaves

Recipe calls for sriracha sauce drops but I didn't use them.
Recipe also caled for peanut halves but I didn't use those.
