Introduction

Number of Servings: 4

Ingredients

    Pork Chops, lean, boneless (4) 3 oz each
    Grape or cherry tomatoes sliced
    Garlic cloves, minced
    Vidalia onions, chopped (or scallions)
    Mushrooms, sliced
    Sherry, dry approx. 2 oz.
    Water
    Olive oil, 1 T

Directions

Pour approx. 1 T. of olive oil in to your pan. Saute your onions and minced garlic until a lovely golden color. Add in your pork chops and brown both sides. Add in tomatoes, mushrooms, sherry and a bit of water. Cover and cook about 15 minutes on either side on medium heat. Add more water if necessary to keep ingredients from sticking to bottom. Cook until pork done all the way through. Cooking times will vary slightly dependent upon thickness of chops. When cooked, serve with mashed potatoes, mashed cauliflower or rice and drizzle reduction left in pan over top. Enjoy!
