Ingredients

    12 slices white bread
    1 medium onion
    1 stalk celery
    2 tbsp parsley
    .5 tbsp Dried Hot Red Pepper Flakes
    1 tbsp celery seed
    .5 stick butter, melted
    salt/pepper

Tips

Some people saute their onions/celery, but I find the tang and the crunch of the raw add is more to my liking, and saves time. This is a simple recipe, but classic. Add cranberries, nuts or other items for a more complex stuffing.


Directions

Tear 2 day-old bread into bite sized chunks in a very large mixing bowl. (Try not to use stuff with all those chemicals!) Chop onions and celery, including celery leaves. Add parsley, celery seed, and hot pepper flakes to the bowl with the bread. Mix thoroughly. (Use your hands!) Add butter, grabbing a handful of mix to clean out the pan you melted the butter in. Mix thoroughly. Add salt and pepper to taste. If you like your stuffing a bit more wet, add a little chicken broth or canned milk. Stuff your bird. With what's left, make a foil packet and cook closed at 350 for 30 min, then open packet, sprinkle with a little broth, and cook another 10-15 minutes.
