Number of Servings: 4

Ingredients

    1 lb. beef sirloin (cut into strips)
    2 green onions (chopped)
    4 cups broccoli florets
    1 can vegetable broth
    1/2 tsp. crushed red pepper
    1 tbsp. soy sauce
    2 tbsp. cornstarch
    1 tbsp. olive oil

Directions

Stir together cornstarch, broth, soy sauce and red pepper until smooth, set aside. In skillet in 1 tbsp. hot oil, stir-fry beef until browned. Set aside. In same skillet stir-fry broccoli and onions until crisp. Add beef and broth and cook until mixture thickens. Yields 4 servings.

    I made this tonight for dinner. Instead of the red pepper I added a 1/2 Tbsp. of fresh ginger chopped and a small can of reduced sodium mushroom pieces. It was very filling and delicious! - 10/25/10

    I made this with a few variations last week.
    I used a frozen stirfry mix, flour instead of cornstarch, and added more fresh veggies.
    It was AMAZING!
