Introduction

A shephard's pie that replaces mash potato with mashed cauliflower. We felt it was not very filling and could have used some more vegetables to help 'fill' it out more and require a smaller serving size. Ingredients

    400 grams Cauliflower, raw
    500 grams Ground beef, lean
    265 gram(s) Rosella Fruit Chutney
    1 tbsp Olive Oil

Tips

We felt it could use some extra veggies (beans, carrots, peas, etc) to help fill out the meal a little more as we felt the serve size was not as filling as we would have liked as-is.


Directions

Preheat oven to 180 deg C.
Brown mince.
Season with salt and pepper and mix the fruit chutney through.
Reduce heat and simmer for 10 minutes.
Remove florets from cauliflower.
Cook florets in a saucepan of gently boiling water until tender (4-6 minutes).
Drain, add olive oil, salt and pepper and mash until smooth.
Pour mince into a baking dish and top with an even layer of mash.
Season again lightly and bake until the top is golden around the rim (approx 15 minutes).


Serving Size: Supposed to make 6 serves, but we felt it only made 2.
