Ingredients

    1 cup Spinach, fresh
    6 tbsp Egg Whites - Great Value 100% Liquid
    .5 fl oz Water, tap
    .33 tbsp Extra Virgin Olive Oil
    .25 cup (not packed) Cottage Cheese, Nonfat
    1 tsp Kraft Reduced Fat Parmesan Cheese (grated) -(2 tsp)
    .25 cup, chopped or sliced Red Ripe Tomatoes

Directions

Mix water and egg whites in a bowl. Salt and pepper to taste.
In a pan heat 1 tsp of olive oil over medium heat. Add spinach to oil and salt and pepper to taste. Cook until spinach is wilted and tender. Then pour egg whites over spinach. When eggs are almost set top with 1/4c cottage cheese and a sprinkle of Parmesan cheese. Fold omelet and cook until done. Serve with chopped tomatoes.
