Ingredients

    1 cup Oats, Quaker
    1 large Egg, fresh, whole, raw
    .5 cup Pumpkin, canned, without salt
    2 tbsp Honey
    6 tsp packed Brown Sugar
    .5 tsp Vanilla Extract
    .5 tsp Pumpkin Pie spice
    .5 tsp Cinnamon, ground
    0.25 tsp MORTON Sea Salt, Fine Salt (by ABSAARI84)
    1 tsp Baking Soda
    4 tbsp *Nestle Mini Chocolate Chips
    .25 cup, chopped Walnuts

Tips

Make sure to use gluten free oats to insure gluten free.


Directions

beat egg, pumpkin, vanilla and honey add brown sugar and beat again. blend or process oats until you have a cup of ground oats and add salt, pumpkin spice, cinnamon baking soda mix together then add to wet ingredients stir until just combined add chocolate chips and walnuts. Refridgerate for 30 hour. Preheat oven to 350. Spoon dough onto cookie sheet bake for 8-10 minutes. Will be soft and chewy bake longer to make crisper.

Serving Size: makes 10 ice cream scoop size cookies
