Ingredients

    1 tbsp Extra Virgin Olive Oil
    2 serving bacon low sodium 2 slices
    .25 cup, chopped Onions, raw
    2 tsp Garlic, fresh, minced
    1/4 cup sundried tomatoes, chopped
    1 cup, pieces or slices Mushrooms, sliced, vitamin D enhanced*
    2 cup celeriac (celery root) peeled and chopped into 1/2" cubes
    4 cups cooked chicken breast, chopped
    2 cup, sliced zucchini or yellow squash, quartered
    1 cup Green Beans fresh, cut into 1 inch pieces
    4 cup, chopped Swiss Chard (or kale or spinach)
    2 tbsp Vinegar, Red Wine
    2 cup (8 fl oz) Water, tap
    2 tbsp Basil, chopped
    8 cup chicken stock

Directions

In a large pot over medium heat, add oil & bacon, stirring for about 2 minutes. Add onion, garlic, tomato and mushrooms. Cook until all veggies are tender, about 5 minutes. Stir in stock and water. Add celery root and chicken. Simmer for 15 minutes. Add squash, beans, and chard. Simmer until all vegges are tender, at least 10 minutes. Add red wine vinegar and season with salt and pepper. Top with chopped basil before serving. *Look for specially labelled vitamin D enhanced mushrooms where other fresh mushrooms are sold.

Serving Size: Makes about 9 2-cup servings
