Ingredients

1.5 cup Organic Quinoa
1.5 head, small (4" dia) Cauliflower, chopped
12 cup Brocolli, chopped
1 large Onions, diced
.25 cup Pine Nuts
60 gram Raw Cashews,
1.75 gram almond, slivered
4 serving Dried Cranberries, 1.5 oz
3 cup Organic Vegetable Broth
1 tsp Salt
1 tsp Pepper, black
Tips
Great for quick family meal for any occasion. Store leftovers in airtight container - should keep for 3 to 4 days.
Directions
Cook the quinoa in vegetable broth, set aside when all broth is absorbed
Toast all nuts on a tray in 300 degree oven until golden brown
in a large skillet and using non-stick spray on medium heat grill diced onions until browned
Add about 1/3 cup water to onions
Add Cauliflower and Brocolli - cook until slightly tender
Add salt and pepper (more or less to taste)
Mix in cooked quinoa and cook for another 5 minutes
Add nuts and dried cranberries and heat thoroughly
Serving Size: Makes 12 Servings
