Number of Servings: 8

Ingredients

    3 Cups of Spinach
    2 Cups of cooked pasta (bowtie is perfect)
    1 can of Dole Mandarin Oranges or 2 medium seedless oranges peeled and sectioned
    1/2 cup of Lite Fat Free Italian Dressing
    1/2 Cup Orange Juice (or juice from canned oranges)

Directions

Another easy to prepare tasty salad - YUM

Cook pasta as directed...boil and drain...then cool

In a large bowl combine pasta and spinach. Add oranges.

In a seperate bowl with a lid...mix juice and dressing. shake well to mix.

Chill the dressing in jar seperately from the salad...and pour over salad when ready to serve.

    The dressing sounds very summery; am thinking of using orzo and adding chicken or shrimp for a light dinner this hot hot summer. - 6/3/08

    I actually tried your suggestion and added grilled chicken to this salad and YUM what a great treat. I also tried the shrimp addition for a special anniversary dinner for my husband! It was a hit! Thanks
