Introduction

Ingredients
-
-1 Can of chickpeas (garbanzo beans)
-About 7 cloves of fresh garlic (use more or less to taste)
-Juice from half of a fresh lemon (use more or less to taste)
-About 2 to 2 1/2 tbsp olive oil (use more or less to taste).
-About 2 tsp of chili powder
-Hot red pepper flakes (optional)
Directions
-Open and rinse one can of chickpeas. Set in food processor.
-Peel skin and cut tips off 7 cloves of garlic (you can use more or less according to your taste- sometimes I use much more). Set in food processor (no need to chop).
-Squeeze about half a lemon over beans and garlic. Save other half in case mixture is too dry later on.
-Pour 1 tbsp of olive oil into processor.
-Sprinkle chili pepper over ingredients according to taste (I love adding lots- I don't usually measure).
-Add hot red pepper flakes according to taste (I always use these to give a nice texture and a very spicy taste).
-Put food processor on high and add your other serving of olive oil and some more lemon juice as needed.
*The goal is to have the texture smooth and somewhat pasty or sticky. You haven't added enough liquid if the mixture looks chunky and you can see individual garlic pieces. The mixture is too runny if it swishes around.
*You may have to stop and start processor several times to check texture. Use little bits of liquid at a time to avoid mixture being too runny.
*Makes about 6 servings.
