Introduction

Ingredients

4 chicken breasts (deboned, skinned, and cut into bite-size pieces)
Olive oil
1 medium onion (chopped)
1 clove of garlic (chopped)
2 bell/sweet peppers (I like green and red)
1/2 cup of peas
1/2 cup of green beans
1/2 cup of broccoli
1 can of tomatoes
1 tbsp curry powder (to taste!!)
1 cup of yoghurt
Directions
1. In a pan, heat the oil then gently fry onion and garlic.
2. Add the chicken and cook until slightly browned.
3. Add the chopped peppers, fry.
4. Add the tomatoes (for extra tomatoey flavour, add tomato puree too).
5. Add the peas, green beans and brocolli, cut small. (At this stage, more water may want to be added.)
6. Add the curry powder.
7. Leave to simmer for around 10 - 15 minutes, then check the spiciness, if required add more curry powder. Remember also to check it doesn't dry out, add more water if needs be.
8. Leave to simmer for another 10 minutes.
9. Take off the heat and stir in the yoghurt.
10. Serve with rice, naan bread or poppadoms.
