Ingredients

    1 Medium Onion, Diced
    1 Medium Green Bell Pepper, Chopped in cubes
    2 cloves Garlic, Minced
    3 cups Zucchini (2 Small), Chopped
    3 cup Yellow Squash (2 Small), Chopped
    2 cans Hy-Vee Diced Tomatoes, No Salt Added
    1/2 cup Hy-Vee Italian Finely Shredded Cheese
    1/2 tsp Oregano Leaf
    1/4 tsp Black Pepper, or to taste
    1/5 tsp Morton Fine Sea Salt
    1/2 cup Sour Cream, Light - Land O Lakes
    1 Snackers Size Package of Ritz Crackers (Baked w/Onion Poppy Seed & Sea Salt)

Directions

1. Preheat oven to 350 degrees
2. Spray Glass baking dish with non-stick cooking spray
4. Saute Onion, Green Pepper and Garlic in 2 Tbsp of Olive Oil for about 5 minutes.
5. Add chopped Zucchini and Yellow Squash, Stir and Saute for 10 minutes.
6. Add Diced Tomatoes and stir and let heat for 5 minutes
7. Add Oregano, Black Pepper and Salt, let cook for 5 more minutes.
8. Add Sour Cream and stir in until well mixed, pour mixture into Baking Dish
9. Sprinkle with the cheese and mix in.
10. Crumble Crackers and spread on top of the casserole.
11. Bake for 30-40 minutes, or until squash is tender but still has a little crunch.

    Very Good
    It was delicious. I used ff plain yogurt instead of sour cream and cut up a fresh tomato in place of canned, and just used what cheese I had (mexican blend and parmesan). Husband even liked it! - 9/15/20

    Very Good
    I made this tonight for dindin. It was good. Next time I will drain the tomatoes and use fate free yogurt. I also added Italian seasoning and Parm cheese as it was what I had on hand. - 8/16/18
