Ingredients

    1 cup Vegetable Broth
    2 large, grated carrots, sliced
    1 large onion, chopped
    1 can red lentils (14 oz.)
    1 can diced tomatoes (28 oz.)
    1 zucchini, sliced
    2 tbsp. Thyme (or to taste)
    2 tbsp. Black Pepper (or to taste)


Directions

In large saucepan, heat olive oil. Add veggies and sautee for 5 min. until tender.

Add vegetable broth, lentils, tomatoes and spices. Stir and let simmer for 25 min.
