Introduction

Just like a warm bowl of apple cinnamon oatmeal, only portable! Just like a warm bowl of apple cinnamon oatmeal, only portable!
Number of Servings: 12

Ingredients

    2 cup old fashioned oats
    1 tbsp ground cinnamon
    3/4 tsp Baking Powder
    1/4 tsp kosher salt
    2 medium bananas, very ripe
    1/3 cup Almond Butter
    1 large apple with skin, diced small
    1 cup 1% or low fat milk
    1/2 tbsp honey
    1 tsp vanilla extract

Directions

Pre-heat oven to 350 degrees. Combine all dry ingredients in a medium bowl. In a medium bowl mash banana and then add almond butter, milk, honey, vanilla and diced apple. Combine wet with the dry and mix well. Scoop batter into greased muffin tin (or greased muffin papers), filling each almost to the top. Bake for 20-25 minutes or until toothpick comes out clean.

Serving Size: Makes 12 muffins
