Introduction

Packed with veggies and 9 grams of protein and almost no fat, these egg white muffins are great for meal prepping :) Leave out the cheese and they are fat free and Vegan!

Ingredients

    Coconut oil spray
    6 oz Mushrooms, fresh
    6 oz Onions, raw
    6 oz Zucchini
    3 clove Garlic
    1.5 cup Egg whites
    2 Tbsp Shredded Asiago Cheese

Directions

Preheat oven to 350
Spray large muffin tin with coconut oil spray
Saute veggies with salt and pepper and coconut oil spray
Portion veggies into muffin tin
Sprinkle cheese on veggies
Pour 1/4 cup egg whites into each muffin
Bake for 20 minutes
