Ingredients

    1 Tbs Olive Oil
    1.5 lbs boneless, skinless chicken breast [or thighs]
    salt and pepper to taste
    1 cup Mushrooms, halved
    1 cup, chopped Onions, raw
    1/2 tsp Kosher Salt
    1/4 tsp pepper
    1/2 tsp Paprika
    2 tsp Thyme, fresh
    2 Tbs Flour, unbleached
    12 oz Beer, Porter
    1 cup Fat Free Chicken Broth Less Sodium
    2 tsp Worchestershire Sauce
    Parsley for garnish

Directions

Heat oil in pan. Pat chicken dry, season with salt and pepper. Braise in pan, 4-6 minutes, turning once. Remove from pan. Add onion and mushrooms, cook 5 minutes. Mix flour, thyme, paprika, Worchestershire, salt and pepper into broth. pour broth and beer into pan. Bring to a boil. Add chicken. Reduce heat and cook through.

Serving Size: makes four 6 oz servings
