Ingredients

    3 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    1 tsp Baking Soda
    .5 tsp Cinnamon, ground
    .5 tsp Ginger, ground
    2 medium Egg, fresh, whole, raw
    2 tsp Essence, Vanilla (by AUSTINLOSER)
    4 tbsp Coconut Oil
    2 medium (7" to 7-7/8" long) Banana, fresh
    .50 cup, pitted, chopped Dates
    3 tbsp Coconut, shredded sweetened
    .25 cup, chopped Carrots, raw

Tips

Very moist cake.


Directions

1. Preheat oven to 180C. Grease or line your loaf tin.
2. In a large bowl, combine almond meal, baking soda, ginger and cinnamon then set aside.
3. In another bowl, whisk the eggs then stir in vanilla, melted coconut oil and mashed bananas.
4. Combine wet and dry ingredients.
5. Fold in dates, carrot, coconut and chopped nuts.
6. Transfer batter to prepared loaf tin.
7. Bake for 40minutes or until cake tester comes out clean.

Serve on its own, or even with a dollop or whipped (or runny) cream or Greek yogurt.
