Ingredients

    Coconut Filling
    1/2 C ARTISANA COCONUT BUTTER
    (8 tbsp, 128 grams)
    1/2 C Coconut Oil
    (8 tbsp, 105 gram)
    1/2 C Shredded Coconut Unsweetened
    1 stick (0.8g) Equal Gold

    Chocolate Topping
    1-1.5oz Coconut oil (cocoa butter also ok)
    .5 oz Semisweet chocolate (can add up to 1oz)
    1/4 CUnsweetened Cocoa Powder
    .25 tsp Vanilla Extract

Directions

Coconut Filling:
Melt coconut butter and 8 TbSp coconut oil until smooth.
Stir in chredded coconut and sweetener if desired
Divide up unto 20 mini or 18-19 medium cupcake foils
Chill in freezer until hard

Chocolate topping:
Melt
