Introduction

Ingredients

    12 tbsp Aquafaba
    .75 cup Granulated Sugar
    1 tsp Vanilla Extract
    0.5 tsp Cream Of Tartar

Tips

You can use other flavored extracts or food coloring for variety.
Use extra as non dairy whipped topping!


Directions

Preheat oven to 200F / 100C.
In bowl, beat aquafaba with vanilla and cream of tartar until stiff peaks form (may take up to 10 min).
Add sugar 1 tablespoon at a time, mixing well.
Pipe or drop in rounded spoonfuls (not too big - just bite sized) onto cookie sheet lined with parchment/cooking paper (NOT wax paper).
Place in oven for 90 minutes to 2 hours depending on size of meringues. They should be drying, not browning, if they brown the heat is too high.
Turn off oven and let oven cool down without opening to allow the meringues to continue drying out fully - works great to leave in oven overnight.
Place in airtight container.
