Introduction
This is shamefully quick, easy, delicious and very filling. A light and refreshing shrimp scampi that is still very satisfying as a "fancy" main dish. Not my recipe, but I "tweaked" the original a bit and it was so good I had to share it! This is shamefully quick, easy, delicious and very filling. Ingredients

* 3 medium zucchini, spiralized (For inspiralizer, use blade C, for other vegetable spirlazers use the small blade(I entered this as 2.5 cups cubed for the nutritional info)
* 2 slices Wright Smoked Bacon, cooked crisp
* 8 oz Shrimp, raw (about 26 medium peeled and deveined frozen Kroger brand is what I used)
* 2 fl oz Lemon Juice
* 1 clove Garlic, minced
* 4 tbsp very finely diced raw onion
* 1/8 to 1/4 tsp Pepper, red or cayenne (adjust to your taste)
* 12 tsp (1/4 cup) grated parmesan cheese ( I weighed out 6 two tsp servings at 5 gms each, or 60 gms total weight- looked like more than 1/4 cup to me!)
Tips
The original recipe called for shallots, fresh lemon zest, and fresh chopped parsley. I didn't have these, but it turned out great without. I used onions instead of shallots and refrigerated minced garlic. And the "green topped" grated store brand parmesan. Prep everything first, it goes very quickly once you start cooking everything after the bacon! Full disclosure, I used smaller shrimp than in the photo as they were cheaper and gave more bites of shrimp to go with the noodles.
Directions
1. Put large skillet over medium heat and add in the bacon. Cook for about 3 minutes on each side or until cooked to your crunchy preference. Remove, draining briefly and put on plate lined w/ paper towel.
2. Leave only 1 Tbs of bacon fat in the skillet and add in the garlic. Cook the garlic for 30 seconds and then add in the red pepper flakes, onions and shrimp. Season with salt and pepper and let shrimp cook for about 2 minutes on medium, flip over, add in the lemon juice and cook two minutes or until done (curled up). Remove the shrimps with a slotted spoon and set aside.
3. In the same skillet, add in the zucchini noodles and toss to combine, for about 2 minutes, then add in the Parmesan cheese and mix briefly. Then add in the shrimp and crumble in the bacon. Toss to combine. Divide onto two plates.
Serving Size: Makes 2 generous main dish servings
