Ingredients

    4 oz venison breakfast sausage (by 50CALIBER)
    0.5 cup, chopped Onions, raw
    2 pat (1" sq, 1/3" high) Butter, salted
    .25 cup Sun Dried Tomatoes
    1 cup Baby Spinach - Fresh Express (bagged)
    4 large Egg, fresh, whole, raw
    0.125 cup, shredded Cheddar Cheese

Tips

If you have high cholesterol, you might want to use olive oil instead of butter. I also used a very lean sausage and a compound butter that I had put several fresh herbs in.


Directions

Melt butter in skillet and add sausage, crumble as it cooks. Add onions and cook until beginning to be translucent. Add spinach and crumbled dried tomatoes and cook until spinach is wilted completely. Add eggs which you have beaten well. Stir and cook as you would scrambled eggs. Add cheese right before the eggs are cooked and finish.
