Ingredients

2 Cups Almond Flour
1/4 Cup Maple Syrup
1/4 Cup Coconut Oil
1/4 Cup cocoa nibs unsweetened
1 oz (10-12 kernels) Macadamia Nuts
1/4 tsp Baking Soda
1/4 tsp Sea Salt
Tips
You can substitute water for the maple syrup and add in several stevia packs for the extra sweetness. This will create even a more low glycemic cookie.
Directions
Preheat your oven to 250 degrees. Prep a baking sheet pan with parchment paper.
Mix all ingredients in a mixing bowl until fully mixed. Wet hands slightly so the batter does not stick and roll up 8 small balls of the batter and press them individually on the baking sheet to form 8 cookies.
Bake at 250 degrees for 30 plus minutes. Keep an eye on them so they don't burn. Remove from the oven and let cool for 10-15 minutes before serving. Store left over cookies in the freezer or frig so they don't get soggy at out room temp.
