Ingredients

    1 head, small (about 4-1/2" dia) Cabbage, fresh -- chopped
    5 medium (2-1/4" to 3-1/4" dia.) Yukon Gold Potatoes -- diced
    32 oz Hillshire Farm Beef Smoked Sausage -- sliced into rounds
    3 Leeks, sliced into 1/8 inch rounds (white and light green parts only)
    6 cup (8 fl oz) Chicken Broth
    2 carrot (7-1/2") Carrots -- sliced into rounds
    1 stalk, large (11"-12" long) Celery -- sliced
    3 cloves Garlic -- minced
    1 Bay Leaf
    2 tbsp Extra Virgin Olive Oil

Directions

1. Brown sausage in large pot or Dutch oven. Remove with slotted spoon and set aside.
2. Add olive oil to remaining sausage grease. Add leeks, carrots, and celery. Saute about 5 minutes.
3. Add cabbage and garlic. Saute another few minutes.
4. Add broth, potatoes, seasonings, and cooked sausage.
5. Simmer until potatoes are tender, appx 20-30 minutes depending on how large you dice the potatoes.
