Ingredients

    2 pounds boneless, skinless chicken breasts - approximately 3 medium-large breasts, cut into approximately 1/2- to 1-inch chunks
    3 tbsp olive oil
    3 tbsp red wine vinegar
    Juice of 2 medium limes
    1 tbsp chili powder
    1 tbsp paprika
    1 tsp red pepper
    1 tsp garlic
    1 tsp salt
    black pepper to taste

Directions

Thoroughly wash chicken breasts, then cut into chunks.  (I use kitchen scissors to save time.)  Place chicken breast chunks, olive oil, red wine vinegar, lime juice, and all spices in a plastic storage bag and knead thoroughly until chicken is completely coated.  Marinate overnight if possible, but a minimum of one hour.  Spread marinated chicken onto medium cookie sheet and place uncovered in oven preheated to 350 for 20-25 minutes.  You will hear the marinade sizzling, which is fine, but make sure not to let the pan go dry or you will have a mess on your hands!
