Introduction

A cool summer treat. A cool summer treat.
Number of Servings: 12

Ingredients

    1 yellow cake mix
    2 small cans of crushed pineapple (sugar free)
    1 small can of mandarin oranges
    1 package of vanilla SF FF pudding mix
    1 tub of Cool Whip Free
    1/2 cup of apple sauce
    1 can of diet 7-Up or Sprite

Directions

In a bowl combine the cake mix, 1 can of crushed pineapple, the applesauce, and about 1/2 the can of soda. Stir well and dish into a 12 slot cupcake tin. (You might have some extra for another few cupcakes)

Bake according to the box.

In another bowl add the cool whip and pudding mix, then drain the pineapple and oranges and fold them in slowly.

When the cupcakes are done top each with the cool whip mixture.

    My son's girlfriend made these. She put them in disposable baking tins bigger than a cupcake, though. Mine was delicious! I can't wait to make them myself. - 7/31/09
