Introduction
These are the best low carb fudge pops that I have ever had. They are creamy and chocolatey with a slightly soft, chewy texture, just like traditional fudge pops. Ingredients

1 3/4 cp Heavy Whipping Cream
3/4 cp Almond Milk (Unsweetened)
1/3 cp granulated Erythritol
6 tsp Sucralose (like Splenda)
2 large Egg
1 tsp Vanilla Extract
2 1/2 oz. unsweetened chocolate
Tips
2 oz. of coconut oil or 2 oz. of cocoa butter plus 1 oz of cocoa powder can be substituted for the unsweetened chocolate.
Directions
1. In a 1 1/2 quart saucepan, whisk together the heavy cream, unsweetened baking chocolate, granulated erythritol, almond milk, sucralose and eggs.
2. Place saucepan containing the mixture over medium low heat. Whisking continuously, heat mixture until it just comes to a simmer. Remove from heat immediately.
3. Whisk in vanilla extract. Pour into popsicle molds, cover, and insert popsicle sticks. Freeze until completely frozen (about 5 hours).
Serving Size: makes 12 fudgsicles
