Introduction

Ingredients

    1 cucumber, peeled, seeded, & diced
    1/2 t minced fresh jalapeno
    2 T fresh lime juice
    2 t brown sugar
    2 T shredded coconut
    1 mango, peeled & diced
    1 small red bell pepper, minced
    1 T chopped fresh cilantro or spearmint leaves

Directions

In a large bowl, combine the cucumber, chile, lime juice, brown sugar, coconut, mango, & bell pepper. Toss well. Cover and chillf or a t least 15 to 20 minutes and serve cold or at room temperature. Just before serving, top with cilantro or spearmint.
