Ingredients

2 cups whole wheat or all-purpose flour
3/4 tsp baking soda
1/2 tsp iodized salt
1/4 cup salted butter, softened (I use Kerrygold)
1/2 cup golden brown cane sugar
1/4 cup Truvia Cane Sugar Blend (for baking)
2 large eggs
1-1/2 cup mashed ripe banana (about 3 bananas)
1/3 cup sour cream
1 tsp vanilla extract
cooking spray with flour
a 9x5 non-stick bread baking pan
an electric hand-mixer with beater blades
3 mixing bowls
a whisk
a rubber spatula
Directions
Combine flour, baking soda, and salt in bowl; stir with whisk. Cream butter and sugars with electric mixer at medium speed for 1 minute. Add eggs one at a time, beating well after each addition. In another bowl, combine mashed banana (do this first with fork in bowl) , sour cream, and vanilla extract--beat until blended. Stir the creamed butter/sugar into the banana-sour cream-vanilla extract mixture with spatula.
Add flour mixture, beating at low speed until just moistened. Pour batter into greased 9x5 pan. Bake at 350 degrees for 1 hour (you may do the toothpick test, my grandma never did). Cool baking pan 10 minutes on cooling rack, turn over to release bread, and cool completely on rack.
Serving Size: Makes 10 slices
