Number of Servings: 6

Ingredients

    *1lb uncooked boneless, skinless chicken breast, cubed.
    *3 cups fat-free chicken broth (low sodium optional)
    *3/4 cups water
    *1.5 cups uncooked brown rice
    *4 oz reduced fat chicken or turkey sausage, diced, flavor of your choice. I recommend smoked or cajun!
    *1/2 cup celery with leaves, thinly sliced (optional)
    *1/2 cup onion, chopped
    *1/2 cup green bell pepper, chopped (optional)
    *2 tsp Cajun Seasoning
    *2 garlic cloves, minced
    *1 tsp hot pepper sauce (optional, use to taste)
    *1 bay leaf
    *1, 14.5 oz can no salt diced tomatoes, undrained.

Directions

In a large nonstick skillet, saute chicken 2-3 minutes

Stir together remaining ingredients in slow cooker (5 quarts is ideal size)

Add sauteed chicken

Cover, cook on high 6 hours.

Makes 6 servings of 3 cups!
