Introduction

Ingredients

SALAD:
1 1/2 cups chopped Kale
1 cup shredded Green Cabbage
1 cup shredded Radicchio
1/2 cup shredded Brussels Sprouts
1 medium Fuji Apple, cored and sliced
1 cup Snow Peas, sliced on diagonal
1 medium Red Bell Pepper, thinly sliced
2 roasted Chicken Breasts, skinless and deboned
1 1/2 tbsp chopped Shallots or Green Onions
1/4 cup Cilantro
3 tbsp sliced roasted Almonds
2 tbsp fresh chopped Mint Leaves
DRESSING:
1 1/2 tbsp Lemongrass
4 tbsp Lime Juice
1 1/2 tbsp Fish Sauce
2 tsp Brown Sugar (or sweetener of choice)
1 clove crushed Garlic
1 tsp Chili Garlic Sauce or to taste
Directions
SALAD:
In a large bowl, combine kale, cabbage, radicchio, Brussels sprouts, apple, snow peas, and bell pepper. Top with shredded chicken, shallots or green onion, cilantro, almonds, and mint. Top with lemongrass dressing below and serve.
DRESSING:
Trim lemongrass to reserve only the white less fibrous portion, then slightly crush and slice into small pieces. In a blender combine lemongrass, lime juice, fish sauce, brown sugar, garlic, and chili garlic sauce. Pour over salad and enjoy!
