Introduction

Ingredients

    6 egg
    4 patties morningstar sausage
    .5 C cheddar cheese
    1 scallion
    6 slices tomato
    1 clove garlic
    2 med. potato
    1 ear corn
    .5 cup salsa

Directions

makes about 3 large servings

Prep:
*slice potatoes into thin rounds (or use presliced or hashbrowned pot)
*chop sausage patties, and then thaw (micro is fine)
*slice scallions and tomato and onion
*Beat eggs with small amount of milk
*heat two pans (one large/one medium) with small amount of oil or nonstick spray over medium heat.

start oil and onions and garlic in both pans

(perform these two pans at the same time to allow faster prep)

In First Pan:
In large pan lay out in as close to single layer as possible the potato slices. Allow them to cook for about 5 mins. to start browning and then flip (like hashbrowns). Continue until all potatoes are golden. Then sprinke with desired seasoning (I like garlic, salt, and pepper). Add thawed sausage. Reduce heat to this pan to low and then add small half of the salsa.

Second pan-
sautee corn (or micro) with onions and garlic and then add egg. Scramble eggs and then add cheese, remaining salsa.

In bowl put a layer of the potato mixture and then top with the egg misxture. Add chopped scallion and tomato as well as any other spices to taste.
