Ingredients

    3 cup King Arthur 100% Unbleached White Whole Wheat Flour
    3 large Egg, fresh, whole, raw
    0.45 cup Coconut Oil
    0.45 cup Honey
    4 large (8" to 8-7/8" long) Banana, fresh
    1.5 tsp Cinnamon, ground
    0.25 tsp Nutmeg, ground
    1.5 tsp Baking Powder
    0.75 tsp Baking Soda
    0.75 tsp Salt
    0.25 cup Buttermilk, lowfat

Directions

Melt coconut oil, let cool. Mix with honey, then eggs. Mash bananas and mix with buttermilk. Add to mixture. Mix remaining ingredients. Put into prepared muffin tins and bake at 350 for 20-25 minutes, until knife inserted comes out clean.
