Introduction

This is one of my favorite summertime sandwiches. It makes me look forward to tomatoes getting ripe each year. This is one of my favorite summertime sandwiches. It makes me look forward to tomatoes getting ripe each year.

Ingredients

    Hummus, 2 Tbsp
    Basil, 1/4 cup, fresh, chopped
    Red Ripe Tomatoes, 1 large slice
    Provolone Cheese, 1 slice
    *Sara Lee Delightful Whole Wheat Bread, 2 slices
    Lite Margarine, 1Tbsp

Directions

Slice a large tomato into thick slices. Chop the basil and you are ready to assemble your sandwich. Butter two slices of bread and turn one face down in a non-stick skillet. Spread the hummus over the bread, then layer chopped basil, tomato, and cheese over it. Add the second slice of bread, buttered side up. Grill over medium heat, turning when the toast starts to brown.

    I used spicy hummus and some lite cheddar. Also used my small George Foreman grill and didn't need any butter! - 8/19/12

    I would shave off a ton of calories and make this with olive oil spray in the pan, instead of butter. It would go well with the flavors too. - 7/9/08
