Introduction

Number of Servings: 6

Ingredients

    10 ounces pulled pork (or pork roast, shredded)
    3 large green, red, or yellow bell peppers
    1 bag boil in bag brown rice, cooked and drained
    1/2 small onion, chopped
    2 Tbls Kraft BBQ Sauce
    1/4 cup tomato sauce
    2 Tbls salsa
    1 clove finely chopped garlic
    2 tsp black pepper
    Pam or other cooking spray

Directions

Preheat oven to 400 F. Cut bell peppers in half, scoop out stems, seeds and veins to make little boats. Mix together all other ingredients in medium sized mixing bowl. Stuff pepper halves generously and place on sprayed baking sheet. Bake for 20 minutes or until browning on the top. Serves 6!

    I fixed this dish as a cassarole by cutting up all the peppers and baking in a dish. Very Good! Would fix again. - 8/27/08
