Ingredients

    8.0 cup, chopped Kale
    0.33 cup Cranberries, dried, sweetened (craisins)
    8.0 half Apricots, dried
    3.0 medium (4-1/8" long) Scallions, raw
    0.5 cup, grated Carrots, raw
    0.25 cup, hulled Sunflower Seeds, without salt
    0.33 cup Lemon Juice
    5.5 tbsp Extra Virgin Olive Oil
    5.0 serving Bragg - Premium Nutritional Yeast Seasoning (1Tbsp/5g)
    35.0 Grams Garlic

Directions

Combine lemon juice, evoo, garlic, and nutritional yeast in blender. Chop scallions and apricots into pieces. Mix all remaining ingredients together and dress salad as desired.

Serving Size: Makes a large batch which can be portioned out into 2 cup servings for lunches
