A great substitute for fast food breakfast. A great substitute for fast food breakfast.
Number of Servings: 2


    1 large egg
    1 egg white
    2 strips turkey bacon
    2 whole wheat english muffins
    2 tablespoons shredded cheese
    Salt and pepper to taste


Split and toast the english muffins.
While the muffins are still hot sprinkle one tablespoon on each muffin.
Beat together the egg and egg white, add salt and pepper if you wish.
Scramble the eggs (for fluffier eggs cook over low heat).
Place the eggs on one half of the muffin.
Cook the turkey bacon in the microwave according to your packages instructions.
Place the bacon on the muffin.

  • I actually found a gadget at Target so I can do everything but the muffin in the microwave. It has 2 spots to put the egg, and a tray for the bacon. Takes 90 seconds from start to finish. I use a slice of lite american cheese and egg beaters. - 7/10/08
